For many summers, I was the resident chef at CK Rock in Cornwall, where we are lucky enough to have a fantastic array of freshly-caught fish, seasonal produce and the most stunning surroundings on earth. Although I am now based in Dorset, by special arrangement I can come to Cornwall to cook a bespoke menu for you, your family and your guests. Summer Menu


  • Gazpacho – the Spanish classic with juicy, ripe tomatoes and smoky paprika
  • Green gazpacho – a fresh twist on the original, made with cucumber, green pepper, spinach and walnuts
  • Herb-stuffed tomatoes
  • Marinated red peppers with buffalo mozzarella
  • Figs with goat’s cheese, honey, basil & rocket
  • Bruschetta with figs & cured ham, mixed roast vegetables and tomato & basil
  • Crab salad with baby plum tomatoes, avocado, pink grapefruit & citrus dressing
  • Porthilly oysters (grown less than a mile from Treverra), served with wedges of lemon and a shallot & vinegar dressing
  • Ceviche – super-fresh raw fish marinated in lemon or lime juice, with fresh vegetables or fruit, olive oil, spices and herbs. Lemon sole & peppers; Scallop & mango; Mackerel & pomegranate – or whatever else is particularly lovely and fresh from the sea that day!
  • Cornish crab with tarragon aïoli – ideal for lunch or snacking, piled onto fresh bread or my Norwegian crisp breads


  • Roast fillet of beef – cooked exactly how you like it, delivered warm for eating straight away, but also fantastic cold the next day for lunches or picnics. Choose from a chunky tomato salsa, a rocket & horseradish sauce or a watercress & mustard sauce
  • Saffron-scented chicken pilaf – tender chicken breast and basmati rice studded with toasted almonds, pistachios, cashews and pine nuts, with aromas of cardamom and lemon
  • Honey and mustard salmon – lightly marinated, this can be grilled in advance or delivered to you ready to grill yourself and eat hot
  • Tiger prawns with peas & lettuce leaves with a tarragon vinaigrette
  • Whole lobsters with herby aïoli
  • Smoky frittata – with smoked cheese, sliced new potatoes, loads of herbs and smoky paprika – wonderful hot out of the oven, or delicious eaten cold for a picnic

Salads and vegetables (these work really well as a side dish, or choose a selection of three or four for a complete vegetarian meal)

  • Cole slaw – a light, tangy version with green cabbage or kohlrabi (when available), carrots and dried blueberries
  • Cucumber & poppy seed salad
  • Watermelon & feta salad
  • Mixed baby leaf salad
  • Roasted beetroot & butternut squash with sunflower seeds, salad leaves and maple vinaigrette
  • Aubergine & tomato – a rich, chunky warm salsa that goes well (warm or cold) with the frittata, or scooped up with hunks of bread
  • French beans & mangetout with hazelnut & orange
  • Chargrilled broccoli with chilli & garlic
  • Grilled summer vegetables with halloumi – a light, summery meal in itself, full of colours, textures and aromas, the fresh vegetables are drizzled with basil oil and offset beautifully by the salty, robust cheese
  • Asparagus & samphire – the latter is a salty, tender and juicy vegetable that grows locally during the summer – virtually impossible to get when you’re not by the coast, it’s worth making the most of while in Cornwall
  • Aïoli: my homemade mayonnaise with a touch of garlic – you’ll never reach for the Hellmans ever again…

Grains, beans and potatoes

  • Avocado, bulgar wheat & pea salad
  • Garlicky & lemony cannellini beans
  • Potato salad with herbs
  • Twice-baked potatoes – creamy and tangy at the same time, with crème fraîche, mature Cornish Cheddar and spring onions
  • Lentil, pecan & roast beetroot salad with Cornish goat’s cheese
  • Quinoa with roasted summer vegetables and a green herby dressing
  • Wholegrain & wild rice with herbs & lemon

Family food

  • Lasagne – the Italian classic made from scratch
  • Lasagne Florentine – a vegetarian version, with spinach, tomatoes and mushrooms
  • Fish pie – using sustainably caught Cornish white fish and juicy prawns
  • Chicken nuggets – bites of organic chicken coated in egg and fresh breadcrumbs, ready to cook from frozen in the oven
  • Fish goujons – the best Cornish white fish, coated in crunchy breadcrumbs
  • Bolognaise sauce – an unbeatable accompaniment to a bowl of spaghetti
  • Pesto – fresh basil and rocket, Parmesan and pine nuts
  • Amatriciana sauce – caramelised red onions, red wine, tomatoes, pancetta & basil, with a hint of chilli (which can be left out if you prefer a non-spicy version)
  • Seasonal vegetable soup – smooth and delicious, packed full of healthy veg
  • Thai chicken, fish or vegetable curry – a freshly-made paste of fresh herbs and spices is at the heart of this fresh, zingy curry made with coconut milk and either chicken or seasonal veg
  • Swedish meat balls
  • Roast chicken with lemon and garlic
  • Dauphinois potatoes – layers of wafer-thin potato baked with cream
  • Ratatouille – aubergine, red peppers, courgette and basil make up this Provençal classic (or delicious eaten cold, especially with some fresh mint from the garden, chopped and stirred through)
  • Thin crust pizza with homemade tomato sauce, mozzarella and the toppings of your choice

For the BBQ or griddle

  • Hamburgers – 100% organic beef, with your choice of cheddar & bacon, guacamole or goat’s cheese (or please ask if you have your own favourites)
  • Marinated skirt steak with ginger, honey, spring onions and soy sauce
  • Meat kebabs – lamb or chicken, sausage & bacon in a sweet mustard marinade
  • Fish kebabs with basil mayonnaise – chunks of firm white Cornish fish, salmon or prawns with fresh herbs and lemon

Puddings, cakes, cookies and crispbreads

  • Italian blueberry and olive oil cake – with lemon and orange zest, this makes a great accompaniment to Cornish clotted cream
  • Dense chocolate brownies – so fudgy, they need to be kept in the fridge.  Serve with a scoop of ice cream or sorbet, or just a cup of coffee
  • Cherry tart – crunchy almond pastry base with a custard filling and cherries (when in season – or I can use other soft fruit as available)
  • Carrot cake with cream cheese icing
  • Pavlova – chocolate or plain meringue, with whipped cream and fresh berries
  • Crème brûlée
  • Selection of ice creams and sorbets made to order.  We love English strawberries & cream, crème fraîche sorbet, salted caramel ice cream… but please let me know if you have a particular favourite you’d like me to make. Add a butterscotch or salted caramel sauce.
  • Fruit crumble – filled with whatever seasonal fruit you fancy, the topping is crunchy with toasted almonds
  • Korova cookies – crumbly, intense, dark chocolate cookies with a pinch of Cornish sea salt to offset the cocoa
  • Milk chocolate chip cookies – slightly soft and a little bit chewy
  • Wholewheat Norwegian crispbreads made with sunflower, pumpkin, sesame and linseeds


All you need for breakfast, delivered to your door – choose from homemade jam (summer favourites include strawberry or rhubarb & vanilla from the Treverra garden), ready-to-bake croissants, home-baked bread, my own homemade honey & almond granola, fresh milk, juices, coffee, tea, ingredients for a full English breakfast and even your favourite newspaper.


I can make up a picnic for you to take on a day out to one of the wonderful local beaches. We can provide crockery and cutlery, as well as rugs to keep you toasty warm; I’ll prepare and pack all you need to eat and drink: salads, homemade breads, cold meats, cheese, sandwiches for kids, hot soup, chocolate brownies… and the all-important chilled bottle of rosé.

I can prepare some dishes to order and deliver them to your kitchen.  If you would like me to come and cook for you in your own home – for example, if you’d like to enjoy some of the fabulous local seafood, such as scallops, mackerel and mussels – do please ask and I’ll be happy to discuss menus, ideas and pricing with you. I have a great deal of experience cooking for guests with special dietary requirements, so do please feel to ask me about this.
